INGREDIENTS:
- Garlic x 2 cloves
- Root ginger - 1/2 inch
- Green chili - deseeded and chopped
- French coriander - 1/2 bunch chopped
- Mustard oil - drizzle
- Grind all the above into a paste and leave for 30 minutes
METHOD:
Take:
Three red tomatoes (core removed)
One green pepper (core and seeds removed)
Prick both all over and add to marinade -leave overnight
Then:
Grill pepper and tomatoes under hot grill Leave to cool and add to blender
Add one green chili deseeded and chopped, 2 cloves garlic chopped, juice one one lemon to mixture - leave for an hour to allow flavours to develop
Finally:
Serve with tandoori chicken, samosas and bhajis
