Pilau Rice

INGREDIENTS:

  • ghee (or clarified butter) 50mls
  • 1/2 inch cinnamon
  • star anise x 2
  • two bay leaf
  • 2 star anise (whole)
  • green cardomons x 4
  • black fennel seeds x
  • teaspoon salt
  • small onion
  • 2 cloves garlic crushed
  • 450 grams basmati rice - washed and drained

METHOD:

warm good sized cooking pot (with lid) and add ghee add chopped onion, garlic and soften add all the spices cook all above until coloured add rice and stir add 2 inches water just to cover rice cook for 15 minutes to absorb water stir rice mixture place lid onto pot and leave on low heat for 5 minutes to steam add fresh coriander to serve For mushroom rice - slice and fry some mushrooms and add to last 5 minutes of cooking time.
